3 cups flour ( gold medal )

Mix 3 cups of flour and 4 eggs
always add flour to the mix, don't start with all
the flour. Mix in a little flour at a time.
Work the dough for 10 minutes.
Let it rest for 10 to 15 minutes, then
roll out the dough with a rolling pin and
stretch out the dough.
Cut the dough into strips (thin for pasta)
or into 3 inch by 3 inch squares for ravioli.
Or into any shape that fits the dish you are
preparing.
